That's a really great idea, I am sure I would use it.

While lots of my torrents can use Automatic management to always go into a bulk directory, lots of them require more granular file path structures, and each of those torrents require Manual management, as I'm specifying the path per-torrent.
Categories: anime, TV shows, movies, porn, music, apps/games Each category would have their own default drive and path, then the app should look for any similar named/numbered files. Files that belong in a subdirectory as part of a set are placed there. I would appreciate this as well, but manually sorting new files isn't hard.

It isn't a matter of difficulty, it's a matter of time efficiency. We all value our time in different ways, and I personally would prefer not having to switch back and forth between Automatic/Manual mode with frequency when it could be pre-defined per category.
This would make a huge difference for people with multiple drives.
edit: ......i just found out what happens when you right click a category and select "edit" and i wonder if that's the exact feature you were also looking for @0penSourcerer

I use this feature already (of pre-defining category paths), but it doesn't solve the issue of Torrent Management Mode defaulting to Automatic or Manual based on which Category is selected.

especially make QB move the downloads to the folders.

Suggestion
I am suggesting adding the option to give each Category the option to use Automatic/Manual save paths so that there could be more flexibility with managing saved locations when adding torrents. This would prevent the user from having to switch back and forth between Automatic/Manual mode when adding torrents.
The current options in qBittorrent only allow for a Global default option for using Automatic/Manual save paths, but if implemented, my suggested feature could be toggled on/off for each Category (perhaps by right-clicking the Category and selecting a "Change management mode" option).
If implemented, it would seem that a "Per Category" option would need to be added to the dropdown menu in the Options -> Downloads -> Saving Management -> Default Torrent Management Mode setting.
Use case
I have many categories which use Automatic mode with pre-defined paths, and many categories in which Manual mode and specified save paths per-torrent are used as well. This would save me (and other users in a similar situation) the time of having to pick Automatic/Manual mode when adding new torrents.
