Change Key and name to better document CI. #890

The ubuntu-latest env here is actually 20.04. There was an odd issue just now where @priti-ashvin-shah-ibm changed the test names to 20.04, and somehow that that generated 2 extra ubuntu tests with the ubuntu-latest tag. So, we are keeping ubuntu-latest as the name.
