Remove unnecessary `html_theme_path` option #929

I did not test this because the docs fail to build on my M1, but as shown in https://github.com/Qiskit/qiskit-finance/pull/244, this should have no impact on the docs build.

@Eric-Arellano No I am not - for me its the applications - Opt, ML, Finance & Nature. (algorithms/opflow in Terra too)
