Update Sphinx theme #398

Summary

Updates to new Ecosystem theme. This is a draft PR to test the build first. This new Ecosystem theme needs Sphinx>=6.0 and at the same time, that version of Sphinx needs at least python 3.8, and that's the reason of this PR.
