A keymap for Latinamerican Spanish layout doesn't exist

Description

There is a keymap-extra for Spanish layout (the one used in Spain): https://docs.qmk.fm/#/reference_keymap_extras?id=language-specific-keycodes

But in there is also a layout for Latinamerican. This is specially a problem if you buy a laptop in Latinamerican, because you need to add in the OS an extra layout if you want to use a QMK keyboard. And switching between layouts is a pain. So in order to use only one layout in the OS an adapted layout is needed.

I have tweaked the Spanish layout and created a Latin-American one and wanted to make a pull request but saw that you need to link an issue so created the feature request. I have flashed it on my keebio iris and tried it on MacOS and works perfectly for my laptop, I think this could be helpful for a lot of people.
