I am wondering if it's also a good chance to remove some older variants.

Not sure. Do you mean the yaml files or to purge the quay itself?

The yaml files. Since these versions are out of date I don't see what's the purpose of periodically rebuilding and publishing them? It could even appear like they are still being maintained/supported while they are not.
