updating the commented out quarto version to avoid repeats of #67

Thanks for the PR. We really shouldn't have these old versions there!

But let's avoid a repeat of this mistake a year from now. Can you change 1.2.123 with SPECIFIC-QUARTO-VERSION-HERE so that it's clear for users what they need to do?
