Document `editorHeight` option #54

Once https://github.com/posit-dev/shinylive/pull/141 is available for both https://github.com/posit-dev/py-shinylive and https://github.com/posit-dev/r-shinylive, update the documentation here to list editorHeight as an option similar to viewerHeight.

I would also like to consolidate all options into a single table for easier reference.
