Improve terminal experience #25

We will eventually use a better terminal app, but for now, home-manager settings for gnome terminal should be managed via its own options, since it's less hacky than internal dconf stuff. Here's the proper settings:

Done, we've also begun transitioning away from gnome-terminal, although I'm not super happy with alacritty yet.

We've since swapped away from alacritty to Kitty, and are having a MUCH better experience. However, our settings are currently quite light, and we're still lacking a proper Find function. There's a post about this here to look into.
