Basic idea is to document the various pieces and rationales in Eth 2. Currently (especially in phase 2) there is a lot of info that developers are not versed on. A suggested format by be similar to the rust book - https://doc.rust-lang.org/1.30.0/book/2018-edition/index.html
It would also be interesting to have a comparison between Eth 2 and other protocols (this might be one of the most interesting topics actually).
For phase 2, https://medium.com/@william.j.villanueva/7673b57eabff can be a good starting point. Also, we have an early writeup on comparison to other protocols (but is more wasm centric) - https://notes.ethereum.org/xhz6rQgdRmaupwFwEXeiQw
For phase 1, the specification and also this: https://notes.ethereum.org/@vbuterin/HkiULaluS
For phase 0, a number of resources exist (let me know if you need links for these). A good entry point though is - https://www.youtube.com/watch?v=S262StTwkmo
