Update README & meta-data #52

Issue #50 raises issues with installation instructions being unclear, as well as how best to use the example scripts. This PR updates the installation instructions to:

  1. Explicitly clone the repository
  2. Solve some issues raised by users regarding permissions and pybind11 install
  3. Move up the conda environment instructions and make more explicit.

In addition I have updated the citation to point to the preprint rather than the EGU abstract.
