firmware: upgrade arduinojson #300

In production we have arduinojson 5.11 ; in distribution we can find 5.13 and 6.x

Migrate to 5.13 can have only minor effect in memory allocation: https://github.com/bblanchon/ArduinoJson/blob/6.x/CHANGELOG.md#v5132

6.x have a little change in API: https://arduinojson.org/v6/doc/upgrade/

There are some firmware depending from this library (stima V3 and stimawifi)
