Added some extra properties/metadata to vrt for ee_month_composite if we like the adjustment we can do it for the other composites... However, I'd like to merge this right away as in here we have defined a custom str() method which serves as a work-around for the very difficult reticulate time elapsed error.... therefore, let's merge into main so we have a nice "fully functional" version on main and we can branch out from there with further developments
