set default to openjdk 8 to avoid java ssl problem #166

Now, successfully converges default-centos-66.

Thank you! Added one more commit of my own (https://github.com/rackspace-cookbooks/elkstack/commit/77a4f1c844cf227279530e6d6d4f2a9c016e7213) to fix some rubocop things like cropped up. Branch passed tests with that added.
