Update Grafzahl and jGrahzahl instructions to use Strimzi's provided Kafka instead of mattf/openshift-kafka.

@elmiko thanks, good point! strimzi.io might be a more permanent home than github, link changed. Also added the note about waiting for Kafka and Zookeeper.
