Add support of esp32-poe with ethernet (Fixes #4)

• the Olimex ESP with POE doesn't have a temperature sensor
• No LED light to enable/disable
• Added ethernet functionality which can be activated / deactivated
• Set the GPIO PIN via the plattformio.ini
