Updating ruby version to 2.5.7 (min required for Heroku as of March 22, 2019) #669

Essentially an update on #654, bumping the Ruby version to 2.5.7 to be compatible with Heroku. Also updated documentation to reflect this where appropriate.

Thanks for your PR @kristin-smith! I apologize for not seeing this sooner. :sad: I just updated our app to use Ruby 2.7.6 so that we can use heroku-20, which still isn't the latest at least better! Closing.
