update nix archive version used for node and bun

Updates the Nix archive version that is used for both Node and Bun. This does the following

• Adds support for Node 22
• Drops support for Node 21
• Updates default version of bun to 1.1.8

To continue supporting Node <16, we need to pin an older version of the archive
