Parallelize build for `minimal` feature in CI #257

Adding support for the minimal feature and the current setting to build all features in CI extends the CI times as the software is built essentially twice.

To reduce CI times, we can parallelize the build to cover the mainnet and minimal profiles in different CI jobs.
