1 week ago Looks like a variant of https://github.com/rancher-sandbox/rancher-desktop/issues/7323 and https://github.com/rancher-sandbox/rancher-desktop/issues/1943. Looks like it was going to get tied back t a larger look at escaping w https://github.com/rancher-sandbox/rancher-desktop/issues/7332 and spaces.
No workarounds (beyond removing the apostrophe I am guessing) just yet.
Actual Behavior
Docker Engine doesn't start so can't do any operation.
Steps to Reproduce
Just installing Rancher Desktop only for my User ( my User folder is "Stefano.D'Onofrio" ) Setting I have selected for the installation:

Expected Behavior
Docker engine just running as expected and I can perform all kind of docker operations
