Add option to spin up windows cluster #150

This PR bumps the version of rancher in the AWS quickstart, and also adds an option to spin up a windows cluster.

Thanks for your contribution. https://github.com/rancher/quickstart/pull/185 introduced a bit of internal refactoring to support Rancher 2.6. I pulled your changes in there and adapted them to still work. Windows support for AWS is now also in master.
