[Rancher2] Update docs for configuring after installation #51

Several places within the documentation it states how to enable/configure a feature during install via helm. Can there be updates made so that it shows how to enable/configure that same feature after rancher has already been installed?

Good example is with the api audit log. It shows what set parameter to apply during install, but not what to do if rancher is already installed.
