Nextra Documentation init and GH actions updates #45

This PR adds in a docs folder into the source directory setup to create the static documentation site using Nextra. As part of this effort, the old demo application that was hosted with GitHub pages is now being replaced by the documentation site. As such, we're removing the terraform steps from the GitHub action workflows and the terraform folder as well
