Updated README for PKG_CONFIG_PATH env variable #172

When building on MacOS 12.6 with Homebrew 3.6.13 I was unable to build without first exporting the PKG_CONFIG_PATH. Although the build does explicitly say to set this I added it to the MacOS instructions.
