I'd like a feature to hide all labels, even when I make a new one (which is 
fairly frequently)

Chrome version         - 8.0.552.237

Removed labels: Priority-Medium, Type-Defect

should be possible to achieve with custom css:
labels hide from listing:

.as{
display:none;
}

to hide from mail view

.hX{
display:none;
}

works for me.
I doubt that you want to hide labels from the menu?

The Gmail module for Minimalist for Everything has all the same features of
Minimalist for Gmail and more!

Please disable Minimalist for Gmail if you have it installed and install
Minimalist for Everything instead.
