modularize code or (at minimum) convert more to standalone functions

Lots of code can be shifted outside of server.r

Also, convert to golem app. something like:

• create second folder as golem package
• copy R/inst/www/etc files in except the app
• copy code for ui and server
• fix any lines of code that call stuff from www
• create a branch on the original repo
• copy files over
• push
• merge pull request
• fix any system.file = package stuff and the title in the UI file
• push to rstudio
