Clean up repo structure. As we begin to move into the next phase of the project, we should consider reorgansing the repo/refactoring where it makes sense (I, @MinaAlmasi will begin this as soon as there is downtime between generating data). Some cleaning has been done already (e.g., removed unused logging script). But more to come!
Fix interactive plots. Modify generation pipeline to handle bigger Beluga model.
