Upgrade to Gradle 7.3.1/SpringBoot 2.6.1/other dependencies #20

Upgrade Gradle to 7.3.1
Upgrade Spring Boot to 2.6.1
Bump other relevant dependencies and remove propdeps/old configurations
Fix deprecated use of exchange() + switch tests to Junit5
Adapt to new classpath PropertySource name to add the .reactor-bot one
