Run tests against MySQL 8

Background context An upgrade from MySQL 5.7 to MySQL 8 is planned for the customer RDS Aurora cluster version towards the backend of the year. We should validate the behaviour of the Foundations APIs well ahead of this date. As we are using entity framework it should hopefully be a straight road for the API side of things.

Specification

Setup RDS running RDS Aurora for MySQL 8 (might be a good idea to consider upgrading the dev env sandbox to this version so that we can just run the postman test suite against that version)
Run postman tests (use this as an opportunity to update them with changes over the last couple of months as they've been left for a bit)
Ensure confidence with this version of Aurora for MySQL. Report back to Nick T / Paul H once complete with results
We will need to make sure that the APIs can be compatible with both versions as it's unlikely all clusters will get upgraded at once
There is a test instance set up (customer code AAU) which is pointing to a MySQL 8 instance. PL has a configuration file for this which we can use to setup a customer connection in the Dev Platform account

@PaulHaynes can you give me a steer on the decision around whether or not we are extending support for 5.7 in AWS? If we are, this can take a back seat for a bit, if not I need to prioritise it in the next quarter. Thanks. @HollyJoyPhillips FYI
