Updates for Tower 3.7.0 #20

Update version number in vars examples, comment out rabbitmq variables in inventory examples (not required in 3.7+), switch rabbitmq in architecture image to redis, begin tracking tested versions

tower3.8 branch added which includes most of the above changes. Closing pull request.
