switch provision_vm from centos to RHEL #85

In the readme for https://github.com/redhat-cop/cloud.vmware_ops/tree/main/roles/provision_vm

Make sure we are showing RHEL examples, or at least in conjunction with other examples we show RHEL, and modern operating systems like RHEL8 and RHEL9 (versus CentOS64)
