Add initial OLM deployment manifests and doc #52

This adds some (very) initial manifests and docs for deploying the operator via OperatorHub and resolves #24 .

Can look to include screenshots for the OLM UI instructions, but didn't want to overload this out of the gate if that's not what we were looking for.
