More explicit backup restore documentation #26

Extended the backup restore documentation to add a bit more hand-holding during the process. The documentation in itself is correct and sufficient for repeating the process, yet a first-time execution may lead to misunderstanding the value of BACKUP_PREFIX which is addressed here.
