Update ontology work to use latest properties from shacl schema

In https://github.com/regen-network/regen-registry-standards/pull/54 I originally was playing around with my own ontology in the regen.ttl file. We've since done some more work on abstracting SHACL schemas.

I think a base set of class & properties to pull from SHACL into the ontology would be:

• Generic Credit Class SHACL schemas
• Generic Project SHACL schemas
• Generic Batch SHACL schemas
• Project SHACL schemas that are specific to a given credit class
• Batch SHACL schemas that are specific to a given credit class

Also open to a more slimmed down set of classes / properties if the above seems like too much for one reason or another.
