feat(providers): adding providers for Mantle and Gnosis chains #819

Description

This PR adds additional providers for:

Mantle chain eip155:5000 to the Infura provider,
Gnosis chain eip155:100 to the Publicnode provider.

How Has This Been Tested?

Integration tests were updated.
