feat(providers): adding Polygon zkEvm and Bitcoin to the Quicknode provider #834

Description

This PR adds the following chains to the Quicknode provider:

Polygon zkEvm eip155:1101,
Bitcoin Mainnet,
Bitcoin Testnet.

How Has This Been Tested?

Integration tests were updated.
