Use EditorConfig

Changes proposed in this pull request

Add a .editorconfig to some of the backend modules to ensure consistent basic formatting (as there is no good formatter for Java)
Add a GitHub workflow that checks if files are compliant with the EditorConfig settings
Add some info on EditorConfig to the respective README files

How to test

docker compose down --volumes && docker compose build --parallel && docker compose up --scale data-generation=0
Check out the new info in the README files
