Fix delete functions

Changes proposed in this pull request

Fix the delete functions for projects and organisations to adapt to testimonials and categories
This also fixes a bug that didn't allow organisations with multiple research units to be deleted

How to test

docker compose down --volumes && docker compose build --parallel && docker compose up --scale data-generation=1
Sign in as admin, deleting software, projects and organisations should always work without errors
Create an organisation with multiple research units, deleting the parent should also work (this also deletes the research units)
