Implement new Maven build #1408

Aim

Finish the Maven-ification of the build.

Solution

Move parent pom to the top level of the repository
Remove deprecated modules
Remove old build files (editions + ant)
Remove old library jars
Migrate to Junit 5

Important notes

The Swagger extension couldn't be saved, it relied on a removed platform module
The XML extension couldn't be removed, too many things depended on it

Remaining work

Create a build (probably GitHub Actions) based on Maven
Make sure that the Junit migration didn't break tests. Some were probably not run before, some might not run now, we need to diff and fix
Push to Maven central

Thanks a lot @quilicicf for the initial push on that front! This is now the working 2.5 branch :) I've pushed some clean up of the Javadocs yesterday, and we'll keep tackling the remaining items. Cheers
