We were getting a lot of dependabot complaints on all the (unneeded) dependencies included in the example project

In this PR:

Simplified the dependencies and updated to latest 2.6 Vue CLI settings
Removed external example API call that required setting up a key and modifying the source
Removed unused Cypress.io configuration
