chore(formatting): format dune files in `esy format` #979

The inconsistent formatting of some of the dune files was slightly bugging me. I discovered dune format-dune-file, and thought it would be a good idea to add it to our formatting script.

dune 2 already format dune file so might not be needed to roll our script.

@Et7f3 very true, but didn't know what the plans were for upgrading to dune 2. This can be removed if/when we do that.
