Better leverage antora variables #170

To fix the https://github.com/rh-aiservices-bu/insurance-claim-processing/issues/157 issue, we leverage some Antora variables and use them in the lab content pages.

@erwangranger should we add something else (like Workbenches, Data Connections, etc) or are we good with this?

looks good to me. Let's merge this as soon as we can so it does not block other content updates.

we can always add more later.
