🐛 [update] - Need to update Keycloak/RHSSO operator #280

📝 Description

There is a new version of Keycloak operator with slightly different capabilities as it is switched to Quarkus. We should update Pet Battle to use the new version of Keycloak before they sunset v19

Creating issue just as a backlog item..no urgent need for this yet.
