Update containers for release 2.1

Update Singularity and Docker scripts to be consistent with riboviz/docs/user/install.md and riboviz/docs/developer/install.md instructions as they are when RiboViz 2.1 is released.

Update docs/run-with-docker.md and docs/run-with-singularity.md to state that users can:

• git checkout 2.1 for the latest official release.
• git checkout develop for the latest development version

When containers have been tested, merge into master and tag with 2.1.

The script and documentations are updated with Ubuntu 2004, R 4.1.0, samtools 1.9 and other new dependencies in the riboviz/docs/user/install.md and riboviz/docs/developer/install.md,

• branch containerize-107 contains the build script for the development environment, and is ready to merge into branch develop
• branch containerize-107-release2.1 contains the build script for the official release 2.1, and is ready to merge into branch master with tag 2.1

The document to switch between these two branches are in readme.md of containerize-107-release2.1

I have also done these tests:

• official release 2.1 version:
  • singularity container on my VM and Eddie, both vignette dataset and the Wallace dataset
  • docker container on my VM, both vignette and the Wallace dataset
  • singularity container on Cirrus login node, the vignette dataset only
  • ask my flatmate who has CS background but know nothing about RiboViz before to build both images and run the vignette dataset
• development version
  • singularity and docker container: vignette dataset only, and I also tested the r packages that are not in official release version can be loaded
