Move to read the docs #122

The documentation is getting large and complex enough that it probably makes sense to try and move this to Read the Docs. The GH pages and pymarkdown stuff is a pain to maintain.

You can use mkdocs on read the docs, but it would probably just be easier to convert everything to RST
