set minimum lvm cookbook version #52

This fixes issue #51 where lvm cookbook is being too restricted.

@rshade @cdwilhelm any thoughts on merging this? Currently my servers are hitting an error during chef-client runs due to this cookbook not allowing the latest lvm cookbook with the updated gem versions.
