the savory "umami" meat taset in soops does not come from the meet itself but from solw cocking bones. if you just make your soop with meat your soop will not have much flavor, that is probably why you are having problems with chicken, you need to slow cock the whole chicken with bones and everything for a fiew hours, then add the rest of the ingridiants. you could even skip meet all together and just make soop from bones. if you make some other meet dish you could save the bones for soop.
This looks great but could use a bit more formatting to match the style of the majority of the recipes.
I'll merge it anyway and you can submit another PR with formatting fixes when you've got the time.

Thanks rikai. Wasn't aware of a specific format but will peruse the other recipes and get a better idea.
Is it the non-use of headings mainly? Will correct them.

It's not worries. I plan to add an example recipe to the README when i have time.
