Alternative logging providers, like zerolog #2

I know it's early days but I would really like to be able to use alternative logging providers. Since logrus went into maintenance mode I have gone quite partial to https://github.com/rs/zerolog

Probsbly worth waiting to see what happens with the native structured logging in go.next. Think that’s based off or very near to slog
