Improve Test Coverage #1

This issue tracks the progress towards having a better overall test coverage for the driver.

Key aspects that need coverage includes:

[ ] Extension registration and basic operations (defined under extension.go)
[ ] Testing various different functions (including Collation, Window and Scalar functions)
[ ] Virtual table modules that includes read-only as well as read-write tables
[ ] Querying capabilities implemented under stmt.go
