Replace Pinecone with Chroma #1

Pinecone currently has a waitlist that may put off new users trying out the app.

Chroma on the other hand, should get them up and running immediately. Plus it fits well into the "open source" trend.

Only issue here is that Chroma is not hosted, AFAIK?

So it doesn't work w/ the deployed app unless we self-manage the instance.

Of course, local support for Chroma is trivial to add.
